ADV.11 Blending, Flavoring, Scenting
OVERVIEW
Many companies jump into the fun world of flavoring and blending teas themselves without really knowing the consequences of bringing these manufacturing processes in-house. The class material addresses important aspects of the operational concerns of applying these techniques within your company’s settings as we explore the three main techniques used today by tea professionals to scent, flavor and blend teas and other botanicals. During each week’s hands-on learning you will have the opportunity to taste some of the more famous teas, as well as hands-on assignments to develop your own skills at applying these techniques. By taking this class you will know:
• Operational considerations for in house manufacturing processes including: OSHA, EFSA, FDA regulations, and the FD&C Act.
• Standard practices and paperwork chain for labeling of organic, kosher, and halal.
• Science, safety, and legal aspects of flavoring materials
• Code of practice of the International Organization of the Flavor Industry (IOFI)
• Guidelines of flavoring agents and labeling: Natural, WONF, Artificial, Natural and Artificial, Nature Identical, and Organic.
• Wet Flavoring applications and documentation requirements.
You will need to order your class kit no later than close of registration:
• Required class kits are not included in your purchase for your course

Students will need to supply the following additional materials BEFORE the class starts. These are not included in the class kit:
• Two professional cupping sets
• An instant read thermometer
• A digital gram scale
• A timer
Course Length:
3 weeks (plus one week grace period to submit assignments and complete any tests.)

This course was a very good class with lots of instruction about blending, flavoring and scenting. Learning the details of how to blend and to flavor was amazing. Always enjoy the cuppings and learning more ways to find the words to describe my findings. Appreciate Ms. Lisa taking the time to give feedback because she gives more understanding with assignments.

Loved the course! Something I'd like to receive is a little more amount of botanicals. I was a little short after cupping them so that limited the amount of product I could use in my blend.

I enjoyed this class very much - and am excited that WTA is expanding the Blending and Flavoring course offerings. This felt like we were just scratching the surface. I would love to learn more about complementary ingredients and how to create a complex interesting blend without "overdoing' it.

This course was very interesting; I enjoyed the hands-on blending and flavoring of the teas. I learned there is much more to the process than putting ingredients together, not to mention all the regulations one must follow. Tea blending and flavoring is an art.

A good course that allowed me to fine tune the learnings from a Skill Building Class at the Expo over the summer. I enjoyed the aspects of trying blends at home ourselves. Would have been nice to have a short list of complementary flavorings for blending with the various teas. I know the list is vast but somewhere to start or recommendations from professionals would be helpful.

Great information - not too overwhelming with extra info. Simply informative on what seems to be most important. I didn't find too intimidating with my experience and interest level.Not totally sure if all assignments made it to instructor. I tried using different formats but still left wondering if readable on instructors end. I would recommend to others if interested. I will refer to course downloads for future reference.

Loved this course. I have learned so much & have been able to share my knowledge with my co workers at my tea room. We hosted a tea blending event at my tea room where we sampled 20 different blending components. It was a sell out & the guests loved it. I am looking forward to experimenting with flavorings. I have thoroughly enjoyed this class. Cupping each ingredient on it's own was a wonderful experience. Also, I especially enjoyed learning the correct way to flavor and blend. The videos were extremely helpful as well. I have nothing but wonderful things to say about this learning experience!
