CORE.03 Tea Terroir Part 1 - China, Korea, Japan, Taiwan
With a strong foundation in the background of the tea plant and how teas are manufactured, we begin our journey to countries of origin and a detailed approach to terroir. And we rightfully start off with our focus on the birthplace of tea - China. Then we will travel to Korea, a smaller country of origin but home of quality green teas that are making a name for themselves around the world. This class will also explore two countries of origin highly influenced by China but truly unique unto their own – Japan and Taiwan. Again, we conclude with a focused cupping of these regions and continue to add to your experience and confidence in the organoleptic evaluation process.
- Name the major tea-producing regions of China, Korea, Japan and Taiwan and their notable teas.
- Identify teas from each country and understand their manufacturing processes.
- Describe the classic characteristics of teas from each of the key tea-growing regions.
- Discern the difference between the teas of various terroirs of each country.
- Understand the history of tea in each of these countries and their tea industries today.
You will need to order your class kit no later than close of registration:
• Required class kits are not included in your purchase for your course
• Class kits need to be ordered from Elmwood Inn Fine Teas
• Go to Elmwood Inn’s World Tea Academy page to purchase kit* (You need to order your kit no later than one week before your class starts to ensure that you receive it in time.)
Students will need to supply the following additional materials BEFORE the class starts. These are not included in the class kit:
• Two professional cupping sets
• An instant read thermometer
• A digital gram scale
• A timer
3 weeks (plus one week grace period to submit assignments and complete any tests.)

A really good start to diving deep into the culture and geographical differences in Camellia sinensis. It inspired additional research, map searches and tea cuppings to really appreciate and respect the impact of tea in these cultures and throughout history.

I found the format of this course very effective-including the history & regions, then tea production styles. The maps were helpful. I think that understanding of the teroirs/geography woul be enhanced by including topographic as well as regional maps - for China, Japan, S.Korea & Taiwan - plus another blank map that the student can print out . The students can then write the regional teas discussed in the text onto the appropriate region)s) on the maps. My favorite class thus far!

Fascinating course. A lot of information to cover. Because of my hectic schedule, it was almost too much information at once. I will keep the notes from this class and refer to them often to keep me informed on my tea journey. I love how the course covers not only the production of each tea, but gives the history, culture and traditions surrounding the teas. I definitely need to hone my skills in sensory evaluation descriptors. Maybe a portion of this course or another course could be offered focusing on sensory evaluations only. Thank you for your valuable feedback on coursework! Looking forward to more classes!

What a fun class! I enjoyed all of the reading materials, the extra videos, and the cupping experiences. All of the images and graphics were great - I wish there were more! Especially maps - I found myself scrolling a lot back to the maps so I could try and remember what province or prefecture we were in - more maps, especially ones that highlight the region we're in, would be useful for me. I also wouldn't mind some lecture-videos. Each of the classes in the catalog has a video sample to watch, and that made me think that much of the class might be listening to Donna Fellman lecture. I didn't mind the reading, but I also wouldn't mind more videos of Ms. Fellman! They are very well done, and helpful, especially when we're talking about leaves or infusions. Lastly, the feedback on my assignments was tremendous - much more than I expected. It's great to not only get constructive criticism, but more special knowledge as well. Thank you very much for a great class!

I feel like I've just tea tour of four countries! Highly informative trek through China, Korea, Japan and Taiwan, highlighting the history of their respective teas and current production. It was also great to learn about the most important teas coming out of each country. Truly informative.
