  • Operational considerations for in-house manufacturing processes including: OSHA, EFSA, FDA regulations, and the FD&C Act.
  • Standard practices and paperwork chain for labeling of organic, kosher, and halal.
  • Science, safety, and legal aspects of flavoring materials.
  • Code of practice of the International Organization of the Flavor Industry (IOFI).
  • Guidelines of flavoring agents and labeling: Natural, WONF, Artificial, Natural and Artificial, Nature Identical, and Organic.
  • Wet Flavoring applications and documentation requirements.

The class material addresses important aspects of the operational concerns of applying these techniques within your company’s settings as we explore the three main techniques used today by tea professionals to scent, flavor, and blend teas and other botanicals. During each week’s hands-on learning, you will have the opportunity to taste some of the more famous teas, as well as hands-on assignments to develop your own skills at applying these techniques. You will need to order your class kit no later than close of registration:

  • Required class kits are not included in your purchase for your course
  • • Class kits need to be ordered from Elmwood Inn Fine Teas

This course was very useful to me to understand what goes into formulating tea blends. It was fun to create my own breakfast blend of black teas. I thoroughly enjoyed blending various botanicals into tea and learning how to determine a formula between percentages and resulting grams. I feel more comfortable being able to create even more blends on my own for my own pleasure. I can turn my own kitchen into a tea science lab.
